## Ingredients

- 1 lb flank or sirloin steak
- 1 large head broccoli
- Soy sauce _(pantry staple)_
- Fresh ginger & garlic
- 1 cup rice
- Cornstarch _(pantry staple)_
- Brown sugar _(pantry staple)_
- 2 tbsp olive oil _(pantry staple)_

## Instructions

1. Cook rice. Slice beef thin against the grain; toss with cornstarch and a splash of soy.
2. Sear beef in a hot wok, 2 min; remove. Stir-fry broccoli with a splash of water, covered, 3 min.
3. Return beef with soy, brown sugar, garlic, and ginger; toss until glossy. Serve over rice.

## Tips

- Slice the beef thin and against the grain, and don't skip the cornstarch. That coating is why takeout beef is tender and home versions often aren't.
- Steam the broccoli in the pan with a splash of water under a lid for 3 minutes. Dry stir-frying alone leaves the stems raw and scorches the florets.
- Have everything chopped and measured before the pan gets hot. The whole cook is about 6 minutes with no time to prep midway.

## Substitutions

- **Flank or sirloin:** Skirt, flat iron, or rump — any lean quick-cooking cut sliced thin. Chicken thigh works with the same method.
- **Soy sauce:** Tamari for gluten-free. A splash of oyster sauce adds the savoury depth takeout versions have.
- **Brown sugar:** Honey, maple syrup, or white sugar. Some sweetness is needed to balance the salt.
- **Broccoli:** Broccolini, green beans, bok choy, or asparagus — anything that takes 3–4 minutes.

## Storage & reheating

Keeps 3 days refrigerated. The sauce thickens further when cold; loosen with a splash of water. Reheat fast in a hot pan — the microwave overcooks the beef. Store rice separately.

## Common questions

### Why is my beef tough?

Usually sliced with the grain rather than against it, or overcooked. Two minutes in a hot pan is enough — it finishes when returned to the sauce.

### What does the cornstarch actually do?

It's called velveting. The starch forms a barrier that holds moisture in the meat and helps the sauce cling — the single biggest difference between home and restaurant stir-fry.

### Can I make the sauce ahead?

Yes. Mix soy, sugar, garlic, ginger and a teaspoon of cornstarch in a jar, refrigerate up to a week, and shake before using — the starch settles.
