## Ingredients

- 2 lb chicken thighs
- 1 lemon
- 6 garlic cloves
- 1 lb baby potatoes
- Fresh rosemary or thyme

## Instructions

1. Heat oven to 425°F. Toss halved potatoes with oil, salt, and half the garlic on a sheet pan.
2. Rub chicken thighs with oil, remaining garlic, lemon zest, salt, and pepper; nestle among potatoes.
3. Roast 35–40 min until chicken hits 175°F and potatoes are golden.
4. Squeeze lemon juice over everything and scatter with herbs before serving.
