  1. Heat oven to 425°F. Toss halved potatoes with oil, salt, and half the garlic on a sheet pan.
  2. Rub chicken thighs with oil, remaining garlic, lemon zest, salt, and pepper; nestle among potatoes.
  3. Roast 35–40 min until chicken hits 175°F and potatoes are golden.
  4. Squeeze lemon juice over everything and scatter with herbs before serving.

Substitutions

Chicken thighs
Drumsticks roast in the same time. Bone-in breasts need less — pull them at 165°F, around 25–30 minutes, or they dry out.
Baby potatoes
Any waxy potato halved to the same size. Russets work but fall apart more; sweet potatoes need about 10 minutes less.
Fresh rosemary or thyme
½ tsp dried per tablespoon fresh, added at the start rather than the end so it has time to soften.

Storage & reheating

Keeps 4 days refrigerated. Reheat in a 375°F oven for 12–15 minutes to re-crisp the skin; the microwave makes it rubbery. The meat pulls easily off the bone cold and is good in salads and sandwiches. Freeze cooked meat off the bone for 3 months.

Common questions

Why 175°F for thighs when chicken is safe at 165°F?

Thighs have more connective tissue, which needs the extra heat and time to break down. At 165°F they're safe but chewy; at 175°F they're tender. Breasts are the opposite — pull those at 165°F.

Can I use boneless skinless thighs?

Yes, but check them at 25 minutes. Without skin and bone they cook faster and dry out more easily, and you lose the crisp skin.

Do I need to marinate them?

No. Salting the thighs and leaving them uncovered in the fridge for even 30 minutes does more for flavour and crisp skin than a wet marinade.
